Could there be anything more Japanese than peeling back a sliding screen door, kneeling on a tatami mat floor and slowly learning the revered art of the tea ceremony? The ancient rituals surrounding the preparation and presentation of matcha powdered green tea date back to the 12th century when Buddhist monks began using tea in religious ceremonies. Later the practice spread to samurai warriors in their aim to bring a concentrated level of awareness to everyday activities. There is certainly a controlled meditative element to the tea ceremony and the carefully prescribed movements are based on 4 principles: harmony, respect, purity and tranquillity.\r\nToday you will learn the basics of the tea ceremony under the guidance of an expert instructor. In addition to the tea ceremony demonstration, you’ll have the opportunity to make your own bowl of matcha and try the accompanying traditional Japanese sweet. The 45-minute class will take place at a tea house on Ninen-zaka, the cobbled street leading up the hill to Kiyomizu Temple in the east of the city

A private sake tasting experience at a local restaurant. It’s perfect for beginners as your sake guide will explain about the history of sake in the area before introducing you to six types of sake and explaining the differences between them. You’ll try out the sakes paired with small local dishes to see what kinds of foods different kinds of sake work best with.

1 night at the Eko-in shukubo. This 100-year-old temple, with origins stretching back almost 1,200 years when Kukai was said to have erected a stupa on this site, has nice grounds and is nestled in a wooded slope. For centuries it enjoyed support of the Shimazu clan of southern Kyushu. It's known for its excellent Buddhist cuisine as well as the dramatic fire ceremony in the morning.
